Turns out, the French had a better system for keeping bugs off their cheese. Found in Carpentras and originally from a fromagerie in Pézenas, this 1930s fromage safe was built with a simple wooden frame and metal mesh sides that allow air to circulate while keeping curious flies away from whatever’s inside. Originally used to protect wheels of cheese as they rested and aged, it’s a wonderfully practical bit of kitchen history. Sylvie uses hers for alfresco dining with her closest friends, stocked with cheese, fruit, and a bottle that’s already been opened.
